Chickpeas salad
You will need: 400 g chickpeas, 3 tomatoes, 1 red onion, 200 g feta cheese, juice from 1 lemon, 3 tablespoons olive oil, fresh mint, fresh basil, salt and pepper. Heat the chickpeas in a pan, stirring well; chop onions and tomatoes, then add the lemon juice, olive oil and half the amount of chickpeas; crush the remaining chickpeas and mix it along, for the salad to become creamy; season with salt, pepper, mint and basil and add the pieces of cheese. That’s all!
