Mashed beans with grilled peppers
You will need: 3 tablespoons of tomato juice, 300 g beans, 1 red pepper, 1 carrot, 2 onions, salt, 2 tablespoons of cooking oil, parsley, 1 kg red Anaheim peppers, salt, olive oil, balsamic vinegar. Wash the beans, then cover with cold water and bring to boil a few times; change water (with hot water); while boiling the beans prepare the pepper salad – grill and peal them, place them in a bowl, mix olive oil with balsamic vinegar and pour the mix into to bowl, so that it adds to the juice left from the grilled peppers; use a saucepan to fry the finely chopped vegetables; add tomato juice and cook slowly for a few minutes; add the beans and some of the water they boiled in; mix and spice to taste; keep cooking using slowest fire until the level drops; stop the fire, let it cool down for a while and sprinkle freshly chopped parsley on each serving. Hot bread also fits along.
